Ingredients

  • 1-2 eggplants, Approx 500g
  • 2 slices stale white bread
  • 3-4 sprigs parsley, Leaves only
  • 1 Small Onion halved
  • 1 tsp salt
  • Freshly ground black pepper
  • 3 tablespoons lemon juice
  • 125ml olive oil

Recipe's preparation

  1. Place whole unpeeled eggplant on a tray and cook 40-50 mins 180 degrees or until soft to the touch. Meanwhile, break up bread roughly into jug, lid + mc on, 30 sec sp 6. Set aside breadcrumbs.

    Place onion and 1 garlic clove into jug. Lid & mc on. 5 secs sp 7 or until onion is really finely chopped. Add parsley . Blend 3 secs speed 5.

    Return breadcrumbs to jug, add salt, pepper, lemon juice.

    When eggplant is soft, cut open, scoop out flesh into a colander and allow excess liquid to drain off. Spoon flesh into jug and blend 30 secs/sp 4. Scape down sides with spatula. 

    Set timer again 30 secs/sp 4 and this time drizzle oil through lid .

    Adjust lemon/ salt to taste. I like it really lemony.

    Serve with toasted Turkish bread.

    I found this a little strong. Am unsure if it is the garlic or the onion. I would make it again but I would halve those two ingredients for my own liking.
    I also omitted parsley as I didn't have any.
