Ingredients

Pork liver parfait

  • 500 g pork liver
  • 2 white onions, cut into quarters
  • 1 bay leaf
  • 200 g Pedro Ximénez
  • 1 star anise
  • 3 juniper berries
  • 500 g butter, cut into small cubes
  • 12 egg yolks
  • 150 g pouring (whipping) cream
  • salt, to taste
  • ground white pepper, to taste
  • 2000 g Milk
  • 1000 g hot water

Recipe's preparation

  1. Place a large bowl onto mixing bowl lid and weigh liver and milk into. Set aside for a minimum 2 hours or overnight.
  2. Bring livers and butter to room temperature. Meanwhile, place onions into mixing bowl and chop 6 sec/speed 6, until fine. Scrape down sides of mixing bowl with spatula and repeat chopping if neccesary.
  3. Add Pedro Ximinez, bay leaf, star anise and juniper berries and cook 10 min/120°C/speed 1 or until liquid is reduced by half. Transfer into a bowl and remove whole spices. Place into refrigerator to chill.
  4. Remove liver from milk and trim off all sinew. Place liver and reserved Pedro Ximinez and onion reduction into mixing bowl and blitz 1 min/speed 10.
  5. Reduce speed to speed 5, adding butter one cube at a time through hole in mixing bowl lid. Then add egg yolks one at a time through hole in mixing bowl lid.
  6. Speed 5, slowy adding cream through mixing bowl lid. Add salt and pepper to taste, then transfer into 4 ramekins.
  7. Without washing mixing bowl. Place water into mixing bowl. Place Varoma dish into position and and place ramekins into Varoma dish. Secure Varoma lid and steam 25 min/Varoma/speed 1 or until parfait just wobbles. Place ramekins into refrigerator for 3 hours (minimum). Serve with whipped fig butter and crunchy baguette.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
