Recipe's preparation

  1. Place all the ingredients into mixing bowl and press briefly 2 times/1 sec/closed lid/Turbo or until tomatoes are broken up slightly and the ingredients are well mixed.

  2. Leave mixture to marinate for approx. 1 hour, pour into a large sieve lined with a coffee filter and drain over a bowl for approx. 3 hours.  The clear liquid in the bottom of the bowl will have an intense tomato flavour. Place liquid (tomato consommé) in the refrigerator until required.

This recipe is from Simon Wright of The French Café in Auckland, NZ. 

We were lucky enough to have guest chef Simon Wright at the opening of our Auckland office on Monday, 24 September.  He served this Tomato Consomme recipe with a seafood twist.  We recommend serving tomato consomme chilled in beautiful white shallow bowls dressed with micro herbs and julienne slivers of cucumber.  Perfect summer starter!

    Some quantities in the ingredient list would be helpful. There are masses of cherry tomatoes  in the garden begging to be used so will guess quantities.

    What are the measurements??? How many tomatoes? Wine? Sugar? Salt??
