- 50 g quinoa flour
- 250 g Milk
- 2 Extra large eggs
- 4 small bananas or 2 large bananas
- dash Butter, For fry

Measure in both flours and milk. Add the eggs and bananas.
Blend 10 sec / speed 5. Look for batter consistency.
Grease your frying pan with the butter and dollop your batter mixture in, turn pikelets over when you start to see holes.
Serve plain or with your favourite topping.

Lovely easy recipe thanks! I had 2 extra kids who come from a 'sugarless' home whom enjoyed them. I had to sprinkle over icing sugar though as my miss 11 told me they needed golden syrup! (It was a small compromise). I used only plain flour with baking powder as I didnt have quinoa flour & a bit extra milk as mix was pretty thick....perfect!

I didn't have quinoa flour so used 150g of self raising flour and added about a teaspoon of baking powder.
Turned well- pretty bland tasting on their own but good with some of the usual toppings

Very nice, mixture was much thinner than I'm used to. I was a little worried! Despite being thin, they were very tasty, light and a nice change from regular plain pikelets.
These are delicious and very easy. My first batch burnt on the bottom before they had cooked through. I did the rest on very low heat with the lid on the frypan. Once I had the timing and temperature right they turned out perfectly! I made my own quinoa flour and they tasted very fresh and had a great texture.
