Ingredients

  • 500 g chicken breast, partially frozen
  • 1 carrot, chopped
  • 1 zucchini, roughly chopped
  • 100 g corn kernels
  • 100 g bread crumbs
  • 20 g soy sauce
  • 100 g Tasty cheese, cubed
  • 1 tablespoon cornflour

Recipe's preparation

  1. Preheat oven to 180C & line tray with baking paper


    Add cheese to bowl & grate 10 sec/spd8, set aside


    Add zucchini & carrot to bowl & process 10sec/spd6, set aside with cheese


    Add chicken to bowl & mince 10sec/spd9


    Add carrot, zucchini & cheese back to bowl as well as remaining ingredients, mix 30sec/counter-clockwise operation/spd 6


    Transfer to thermoserver & place in freezer for 20 mins


    Roll into 2-3cm balls, place on prepared tray. Spray with olive oil if preferred & bake 30-40 mins until cooked & golden.


     


    Raw balls can also be frozen, defrosted and cooked as needed for lunches & snacks!

    I didn't set aside any ingredients after each process, just left them in the bowl and then added the next lot. Also added a teaspoon of garlic powder and some pepper. Might add some herbs next time too, great recipe and I will make them again tmrc_emoticons.)

    I've just made these. I omitted the cheese, becasue my daughter is dairy allergic, and I included some herbs, garam masala and an egg as binder. I put breadcrumbs in the balls and then rolled them in panko breadcrums. They we're lovely, but would have been a touch bland without the additional herbs and spices. So I could only give it four stars.

    Very bland...my two boys did not like them either. They need something to give them flavour as they taste similar to dog biscuit. tmrc_emoticons.~

    after reading the other comments i just minced my chicken breast and added everything else in aswell, no swapping out into seperate bowls, they turned out really well, kids loved them..made a heap and there were none left! will be making again

    my kids 2 and 3 wouldnt eat them, they eat most foods but were not a fan. I found this recipe time consuming. Taking things out and putting into different bowls is too many dishes and time consuming.

    Patchy- mixture a bit too wet. 5yr old wouldn't eat them. Baby thought they were ok.

    I liked these! Couldn't get my daughter to eat them though, I would also add something else in there too, it was a little bland.. I made them with the intention of putting them in lunch boxes but I think they need to be warm to be enjoyed tmrc_emoticons.) Thanks for the recipe!

    My babies (26 and 15 yrs old!) loved these Chicken Bites. Made them bigger so they were like rissoles.  I would possibly use chicken mince next time for ease.

    Would chop the breadcrumbs first next time.

    Sp breadcrumbs in the mixture or rolled onto outside after freezing??
