Wonder rusks

  • 150 g brown rice flour
  • 80 g cooked quinoa or millet
  • 30 g chickpea flour (besan flour)
  • 20 g almond meal, or extra besan flour for nut free version
  • 30 g tahini
  • 40 g macadamia oil, EVOO for nut free version
  • 50 g banana
  • 50 g water
  • 1 pinch sea salt

Recipe's preparation

    Wonder rusks
  1. Preheat oven to 180 degrees. Place all ingredients into thermomix bowl Closed lid and mix for 10 seconds on speed 6. Then mix for 2 minutes on interval speed dough mode. The mixture will appear crumbly but that is ok.

  2. Tip out mixture and knead into a ball.

  3. Divide ball into two and store one in the freezer. Roll the other half into rusk shaped logs.

  4. Bake for 25 minutes at 180 degrees.

Tip

They have a great texture for chomping and rubbing on those teething gums and they are actually nutritious.

The ingredients provide calcium, iron and zinc, as wellas plenty of protein from whole foods, which is just wonderful for our little people.

    My 7 month old daughter loves these. They are a little crumbly once they have been sucked on for a little bit but she loves that she can eat them easily.

    How long do these last out of the freezer ?

    My little boy loves these.  He is only six months so I didn't use almond meal.  i also keep these in the freezer and just give them to him straight away and he seems to prefer it like this (rather then waiting for the rusk to defrost). Much healthier - and cheaper - than the store bought variety.
