Ingredients

BISCUIT MIX

  • 200 grams Butter, Cubed
  • 125 grams raw sugar
  • 160 grams Standard flour
  • 30 grams cocoa
  • 80 grams Cornflakes

ICING

  • 200 grams cooking chocolate
  • 10 grams cream
  • 25 grams Butter, cubed
  • 25 grams walnuts

Recipe's preparation

  1. Line flat oven tray with baking paper. Turn oven onto 180c.

    Place sugar in tm bowl, mill 15 sec/speed 10, then add butter, 35 sec/temp37/speed 3.Scrape down sides, then 20 sec/speed 4.

    Scrape down sides, then add flour 10 sec/ speed 2. enable reverse blade, add cornflakes, 10sec/speed 2. Scrape out of bowl and knead mix together.

    Roll into 12 balls then using fork press each ball onto prepared tray. Bake in oven at 180c for 15 - 20 minutes

    While cooking prepare chocolate icing.  Place cream and butter in tm bowl 90c/1 min/ speed 1.5 then add chocolate and repeat 90c/ 1-2 min/speed1.5 or until completely mixed together, put icing i fridge to set slightly.

    Let biscuits cool then ice and top with pecan nut or walnut.

    Made these in my TM31, no indication in recipe when to put in Cocoa but I put it in with flour. Mixture spread too much when cooking so they were flat when cooked so I would reduce butter next time & use less sugar. Tasted ok though.

    So delicious I put a walnut on top 👏👏, before I put the nut on I put a hand full in the microwave on baking paper and cooked on high for 1 1/2 minutes ,let them cool and gives you a lovely taste 😍

    A great Kiwi classic. I added cacao powder in with the flour, and at the end I kneaded for 5 secs.

    I also reduced the amount of chocolate in the icing and used dark chocolate. Glossy icing

    These were super easy, a huge hit with my kiwi husband and of course the kids, I just used banana chips on to of the icing to make them nut free for school

    MY great Auntie who was a marvellous cook used to make these but she used caramel icing and a half blanched almond on top. I will try this and report back!
