Ingredients

CAKE

  • 1 teaspoon Instant coffeedissolved in boiling water, or expresso
  • 175 grams Butter, Room temperature
  • 190 grams raw sugar
  • 1 teaspoon vanilla
  • 3 eggs
  • 190 grams Standard flour
  • 11/2 teaspoons baking powder
  • 3 tablespoons Milk

ICING

  • 300 grams icing sugar
  • 50 grams Butter (room temp), cubed
  • 1 tablespoon expresso or dried coffee
  • walnuts or pecan nuts, garnish

Recipe's preparation

  1. Describe the preparation steps of your recipe

  2. Line or grease 2 20 cm sponge roll tins.

     

    In tm bowl insert butterfly whisk, make sure the bowl is dry, place 3 egg whites in bowl, 1 -2 min/speed 3. or until light or fluffy. (set aside)

     

    Dissolve coffee in boiling water, if using granulated.

     

    In tm bowl place in sugar and mill 30 sec/speed10, then add butter, coffee and vanilla essence 10 sec/ speed 10, scrape down sides.

     

    Add egg yolks speed 10/ 3 sec, scrape down sides.

    Add flour, baking powder and milk, 5 sec speed 7, scrape sides then insert butterfly whisk, and add reserved egg whites, 10 - 20 sec/speed 2.

     

    Take mix out with spatula and mix further if necessary.

     

    Pour into prepared tins. While cooking make icing.

     

    Insert butterfly whisk, Put all ingredients into tm bowl 20 - 30 sec speed 7 or until mixed. when cakes are cooled, sandwich together with icing and ice the top. Serve with whipped cream

    The flavour is good, my cakes are a bit dense though and there was no baking instructions

    Just tried making this , not one of the best as there isn't any cooking times or temps .

    so I did it at 180 and it took about 35 mins .

    middle still not cooked but tops a touch burned .
