Ingredients

ANZAC Muffins

  • 2 Cups --- apple sauce
  • 1 cup Milk of choice
  • 100 grams Butter
  • 4 tbsp Maple syrup
  • 1 tsp Gluten Free Baking Powder
  • 1/2 cup rolled oats, Sub quinoa flakes for GF
  • 1/2 cup dessicated coconut
  • 1 egg
  • 2 cup GF Self Raising Flour

Topping

  • 1/4 cup Coconut sugar
  • 1/2 cup rolled oats, Sub quinoa flakes for GF

Recipe's preparation

  1. Place your rolled oats, desiccated coconut, gluten free self raising flour and gluten free baking powder into your TM bowl 10 seconds/Speed 5
  2. Now add your wet ingredients to the TM bowl 20 seconds/Speed 5
  3. In a small separate small bowl, mix the topping ingredients until combined.
  4. Evenly divide your muffin mixture into an oiled muffin tray or preferred patty cases; using an ice cream scoop to make life easier.
  5. Bake on the top shelf of your oven on 140°C fan forced for 40-45 minutes.

Tip

We suggest allowing your ANZAC muffins to cool slightly, as hard as this will be, before devouring.
