Ingredients

Afghan Biscuits

  • 185 g Butter
  • 90 g brown sugar
  • 185 g Self Raising Flour
  • 20 g cocoa
  • 60 g Cornflakes
  • 1 pinch salt
  • 1 egg

Chocolate Icing

  • 200 g raw suagr
  • 120 g Butter
  • 1 teaspoon vanilla extract
  • 40 g cocoa
  • 20 walnut halves, optional for topping

Recipe's preparation

    Afghan Biscuits
  1. Pre-heat oven to (moderate) 180C.

    Cream butter & sugar. 1 min on speed 4.

    Add egg. 10 seconds on speed 3.

    Add  flour, cocoa and salt. 30 seconds on speed 3.

    Add cornflakes. Reverse for 30 seconds on 2 using spatula through top to incorporate cornflakes into the mix.

    Place spoonfuls onto lined baking tray. Makes 20.

     Bake at 180C for 15 mins.

    Allow to cool.. Ice with chocolate icing or melted milk chocolate and top each biscuit with a half walnut.

  3. Mill raw sugar in TM for 20 sec on speed 10.

    Remove icing sugar from bowl and set aside.

    Place butterfly into bowl, add butter and mix for 1min on speed 4 or until pale and fluffy.

    Add vanilla, cocoa and icing sugar to TM bowl.  mix for further 1min on speed 4.

    Scrape down sides of TM bowl and mix for another 30sec on speed 4.
