Ingredients
Cake
- 125 grams Butter
- 150 grams caster sugar
- 340 grams Self Raising Flour
- 2 level teaspoons bicarb soda
- 3 tablespoons Milk
- 2 eggs
- 1 Med sized carrot, Peeled and roughly chopped
- 1 Med sized apple, Cored and roughly chopped. Peeling optional. I don't.
- 3 bananas, Roughly chopped
- 100 g Yogurt
- 1 package Cottees Vanilla Instant Pudding
Cream cheese icing ( optional)
- 250 grams full fat cream cheese, room temperature
- 1 lemon, Juiced
- 115 grams icing sugar
- dash vanilla extract
- 1 punnet fresh blueberries, optional

- Preheat oven to 180C
Grease and line a 23cm round springform pan
1. Put butter into the "Closed lid" .
2. Melt at 60C, sp/2/ 3 minutes or until melted.
3. Add remaining ingredients in the order listed.
4. Blend 20 secs/sp5. Scrape and repeat.
5. Spread into prepared tin and bake for 50-60 minutes or until done when tested.
6. Leave in tin to cool before icing (optional) - 1. Combine cheese and icing sugar in "Closed lid" .
2. Whizz at sp 4/20 secs and add enough lemon juice, through the hole, to make it a nice spreadable consistency. It depends on the size of your lemon.
3. Spread over cooled cake.
4. Scatter optional blueberries over the icing.

Tip
A combination of 3 of my favourite cakes..!
Stays moist for a long time.
If you prefer you can incorporate the blueberries into the cake mixture.
Do it right at the end and fold in by hand using the spatula.
Icing is optional. It is also delicious, brushed with melted butter and sprinkled with cinnamon sugar when hot out of the oven.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
