Lemon slice: base
- 125 g Butter, Cold, chopped
- 150 g Flour, Plain
- 75 g icing sugar
- 225 g caster sugar
Topping
- 125ml lemon juice
- tablespoon Grated lemon rind
- 25 g custard powder
- 1/2 tsp baking powder
- 3 eggs

- Preheat oven to 180C
Grease and line a 20 x 30cm slice tray, leaving an over hang of paper.
Prepare the base:
1. Blend all the base ingredients 20-30secs until combined. Press into the slice tray.
2. Bake until lightly golden
Meanwhile prepare the topping:
1. Combine all topping ingredients, 20secs/sp 3, until well combined.
2. Pour carefully over the hot base.
3. Bake for a further 20-25, until set but still has a slight wobble.
4. Cool at room temperature before storing in the fridge.
5. Slice and serve.
