Ingredients
Crunchy ANZAC biscuits
- 150 g plain flour
- 110 g caster sugar
- 90 g dessicated coconut
- 90 g rolled oats
- 125 g Butter
- 75 g golden syrup
- 2 tablespoons Boiling water
- 1/2 tsp bicarbonate of soda

- 1. Preheat the oven to 150C. Regular oven
2. Line tray/s with baking paper.
4. Melt butter and golden syrup 3mins/60C/sp2 or until melted.
5. While mixture is melting, combine the dry ingredients in a large bowl.
6. in a small bowl or cup, combine the boiling water and bicarb.
7. Add to the mixture in your "Closed lid" , and combine 20secs/sp3. It will froth.
8. Scoop into tablespoon size balls and place on the prepared trays. Flatten to 1cm or less.
9. Bake for 20mins in an oven not hotter than 150C! Until deep golden brown
10. Leave to set on the trays for a few minutes the cool on a wire rack
11. store in an airtight container once cool.

These are my favourite style of ANZAC biscuits.
Unfortunately they do soften quickly. But at least they start off crunchy..!

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
