Apple Banana & Oat Muffin Bites

  • 40 g sultanas
  • 40 g dried cranberries
  • 150 g Ripe banana
  • 1 egg
  • 95 g vegetable oil
  • 140 g rolled oats
  • 60 g wholemeal flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 200 g apple, peeled and core removed

Recipe's preparation

    Muffin Batter
  1. Weigh 40g sultanas and 40g cranberries into a small bowl. Pour boiling water to cover and put aside.

  2. Weigh 140g rolled oats into the clean Thermomix jug

  3. Turbo for 3s.

  4. Add 60g wholemeal flour, 1tsp baking powder, 1tsp of cinnamon and mix 4s, reverse, sp4 until combined. Remove into a medium bowl.

  5. Without washing the bowl, add cored apple that has been cut into quarters. Turbo 1s, scrape sides of bowl. Turbo for 0.5s until apple is finely chopped.

  6. Add 150g ripe banana cut into pieces, 1 egg, 95g vegetable oil. Mix 4s, reverse, sp4 until combined.

  7. Add dry ingredients and drained sultanas and cranberry mix.
    Mix 5s, reverse sp4 until combined.

  8. Put spoonfuls of mixture into prepared mini muffin trays.
    Bake in 180 degree, pre-heated fan forced oven for 12-14mins or until browned.

  9. Allow to cool in trays for 5 mins, then cool completely on wire rack.

Tip

These can be made into soft cookies by placing spoonfuls of batter onto a tray.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
