  • 90 grams dried apricots
  • 70 grams sultanas
  • 150 grams raw sugar
  • 280 grams milk
  • 230 grams Self Raising flour.

Recipe's preparation

    Method
  1.  

     

    Preheat oven to 180 deg. C

    Before mixing: Put  the raw sugar into the bowl and mill for 5-10 seconds, speed 9 and set aside.

    Place the apricots into the bowl and turbo 2-3 times until the apricots are a similar size  to the sultanas and  set aside.

    Mill all-bran for 15 sec speed 8 

    Add all the remaining ingredients (including the apricots and sugar) and mix for 10-15 seconds reverse speed 6.

    Pour the mixture into a greased and lined loaf tin and bake in the oven for 30-40 minutes.

     

    Or until a skewer comes out clean.

     

Tip

 

I have substituted (at different times, depending what I find 1st in the pantry) dried cranberries for sultanas and dates for the apricots.

 

The loaf tin I use is 23x8x7cm .

I guess that substituting gluten free SR flour and soy milk would make it gluten and dairy free but I haven’t tried either of those substitutes so it would be trial and error.

    Made this but into muffins. They were very well recived by the whole family! Quite dense but I would expect that because of the All Bran. Will definitely be making again!
