- 80 grams dried apricots
- 225 grams plain flour
- 25 grams Corn Flour
- 1 teaspoon baking powder
- 100 grams rolled oats
- 225 grams chilled Butter, cubed
- 150 grams raw sugar
- 2 eggs
- 1 teaspoon Vanella extract
- 1 tablespoon Demerara sugar
- 130 grams frozen raspberries

Weigh Apricots into bowl, set lid into lock position and Turbo 2 sec x 2. Set aside
Add Plain Flour, Cornflour, Baking Powder and Rolled Oats to the bow and mix for 4 Secs, Speed 4
Add butter and process for 4 Secs, Speed 6
Add sugar, vanella and eggs and mix on Speed 4 until the mixture comes together,
Using damp hands spead 3/4 of the mixture into a greased and lined 20 x 30cm Lamington tin.
Spread the chopped Apricots and Raspberries over the mixture
With the remaining mixture, add 1 Tablesp of Oats and 1 Tablesp of Demerara Sugar and mix for 3-4 secs. Dap the mixture over the slice.
