Ingredients
Apricot (Upside Down) Cake
- 200 g Butter
- 85 g brown sugar
- 350 g Apricots (fresh), Washed, de-seeded and cut in quarters
- 230 g caster sugar
- 5 g vanilla extract
- 3 eggs
- 210 g Self Raising Flour
- 45 g almond meal

Pre heat oven to 180. Grease and line a round cake tin.
Melt 75g of butter 1min/50/speed4 and pour into lined tin. Evenly sprinkle brown sugar over the top then arrange apricots on top of sugar, skin side down. Set tin aside.
Insert Butterfly Add remaning 125g of butter, vanilla and sugar. Mix 30sec/speed4 scrape down sides. Mix for a further 2mins/speed4 until pale and creamy. Keep the butterfly beating and drop 1 egg at a time through the top of lid, beating 30 sec between each addition.
Remove Butterfly.
Add almond meal and flour, mix 10sec/speed2 scrape down sides, then repeat 10sec/speed2.
Evenly spoon mixture on top of apricots in tin and smooth the top. Bake for 45-50 mins or until cooked through. Leave in tin for 10 mins before flipping onto a plate.

If using whole almonds to make almond meal. Mill before step 1.

Thank you for this great recipe, had a small tin of apricots to use up, drained them well, also didn’t have almond meal or almonds to make some so used custard powder.

Made this for dessert last night. Absolutely delicious. I used fresh apricots which had been preserved with cointreau and orange. Yum! Will definitely make again. Has anyone made this with a different fruit? i was thinking of trying it with apple
Easy and delicious
Thanks for sharing this great recipe. I made it multiple times last year and again this year with fresh in season apricots. I only cut the apricots in half not quarters, and find it just as easy to melt the butter in the microwave. This is my go to upside-down cake recipe. Thanks again for sharing.

This was amazing!! I made a half sized batch and so faced the old 1 or 2 egg issue, went with one and then thinned out the mixture with a bit of milk at the end...turned out perfect!!!
Absolutely delicious cake. I made it with apricots from our tree and it was demolished in no time with everyone saying Yummmmm. Thank goodness there are more apricots for another cake.
