Ingredients

Aunty Lizzy’s Butterscotch Tart

Base

  • 90 g Butter
  • 45 g sugar raw
  • 230 g self-raising flour
  • 2 level teaspoons cornflour
  • 2 level teaspoons custard powder
  • 1 egg

Butterscotch

  • 100 g sugar
  • 20 g cornflour
  • 20 g custard powder
  • 350 g Milk
  • 1 pinches salt
  • 60 g water
  • 25 g honey
  • 1 level teaspoons Vanilla Paste
  • 40 g Butter

Whipped Cream

  • 300 g cream
  • 1 level teaspoons Vanilla Paste
  • 1 level tbsp icing sugar

Recipe's preparation

    Base
  1. 1.Beat sugar & butter speed 2, 2 mins.
    2.Add flours, custard powder & egg. speed 3, 20sec.
    3.Scrape bowl & repeat again till mixed well. If mixture seems too soft add a little more SR flour & mix. Mixture should hold together to knead.
    4.Knead and roll between 2 pieces of baking paper until thin and transfer into oiled/buttered round tart dish (make sure there are no air pockets under the base).
    5. Cook on 160 degrees in oven for approx 10-15 minutes or until tart shell is golden brown. Cool before adding butterscotch.

  3. No need to wash bowl after base. Add all ingredients to bowl. 5 min, 100•c, spd 3 mc on. Scrape down sides & bottom of bowl & repeat 5min, 100•c & spd3.

    Quickly transfer immediately into cooled cooked tart shell. Allow to cool slightly before putting into fridge.
    Set for 2-3hours before topping with cream.
  4. Whipped Cream
  5. 1. In a clean & dry bowl. Add butterfly. Add all ingredients. Speed 3, 10 seconds. Then 5 second increments until desired thickness. Be careful not to over whip or you will end up with butter!! Add cream to cold tart.

    Optional *Decorate with a grated chocolate, a drizzle of salted caramel sauce, ice magic chocolate or melt some chocolate in the microwave!



    Recipe can be doubled for a larger tart for parties etc. I have, see photo pictured. Made in a pyrex glass dish.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
