- 110 grams Butter
- 110 grams raw sugar
- 110 grams firmly packed brown sugar
- 2 eggs
- 1/2 teaspoon Vanilla Paste
- 100 grams rice flour
- 70 grams chick pea flour
- 1/2 teaspoon bicarb soda
- 1/2 teaspoon salt
- 140 grams dessicated coconut
- 150 grams choc bits, I like Reese’s
- 2-4 tablespoons brewers yeast
- 70 grams macadamia nuts
- 1 level tbsp flaxseeds, or flaxseed meal

- Preheat oven to 180 degrees. Line 2 large trays with silicone mat or baking paper.
1. Cream butter and sugars for 1min 30sec, speed 4, scraping down the bowl twice in between.
2. Add eggs, vanilla and mix for 40sec, speed 4. Scrape down bowl.
3. Add flours, yeast, soda and salt and mix for 30sec, speed 5.
4. Add coconut, choc chips, chopped macadamia nuts and mix for 40sec, "Counter-clockwise operation" , speed 2.
5. Scoop onto lined baking tray.
7. Bake for 12-15 mins, rotating trays if needed.
9. Allow to cool completely before removing from trays.

Tip
Swap out flours to regular plain flour for non gluten free!
Brewers Yeast has quite a strong flavour, which is why the recipe says 2-4 tablespoons. I personally add 3 heaped.
I like my cookies nice and chocolatey, but you can halve the choc chips (or even add more!) and they are still yummy!
Feel free to add or substitute other ingredients to help milk production. *If you can get your hands on lindseed or flaxseed meal, this is a wonderful addition to help production. Add 10-20g when adding choc chips.
Bake for 12 mins for soft in the middle cookies, or a little longer if you like them crunchy.
