- 250 g unsalted butter, softened
- 1 level tsp Vanilla Bean Paste
- 250 g buttermilk
- 4 eggs
- 430 g self-raising flour
- 1 level teaspoons baking powder
- 1 pinches salt

- Preheat oven to 180°C. Line 2 x 12-hole muffin trays with cupcake liners and set aside.
- Place sugar into mixing bowl and mill 10 sec/speed 10
- Add butter and mix 10 sec/speed 4.
- Add all remaining ingredients and blend 10 sec/speed 5.
- Scrape down sides of mixing bowl with spatula and blend 10 sec/speed 5.
- Divide the mixture evenly between prepared muffin trays and bake for 18-20 minutes (180°C) or until a wooden skewer inserted into the centre of each cupcake comes out clean.
Allow cooling in trays for 5 minutes before transferring onto a wire rack to cool completely. Decorate as desired.

Cupcakes can be made up to 3 days in advance. Place into a sealable container and store in a cool place or the refrigerator.
You can store these cupcakes in the freezer for up to 1 month. Thaw completely before frosting and decorating.
Gluten-free vanilla cupcakes: Replace self-raising flour and baking powder with gluten-free self-raising flour and gluten-free baking powder. Gluten-free cupcakes can be made up to 3 days in advance.

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
