Ingredients

  • 3 ripe bananas
  • 8 medjool dates, pitted
  • 1 tablespoon tahini
  • 55 grams Coconut Flour
  • 2 teaspoons ground cinnamon
  • 15 grams lemon juice
  • 1/2 teaspoon Bi-carb soda
  • 1 pinch salt
  • 5 eggs

Recipe's preparation

  1. Pre heat oven to 160C.

    1. Place bananas and dates into TM Bowl.  5 sec / Spd 6

    2. Scrape down sides.

    3. Add all other ingredients.  20 sec / Spd 4

    4. Pour batter into a greased/lined loaf tin.

    5. Bake for 50 - 60 mins.

    (Check cooked by inserting a skewer in middle and it comes out clean)

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Funny texture.

    I am not sure if I did something wrong but the texture was a bit moist and thick for me.
