  • 125 g Soft brown sugar
  • 1 egg
  • 65 g full cream milk
  • 30 g olive oil
  • 200 g Wholemeal SR Flour
  • 10 g bicarb soda

Recipe's preparation

  1. Preheat oven to 180C, fan forced.

    Add the ripe bananas to the mixing bowl, mix 4 sec / sp 4, the mixture should be slightly chunky still, not smooth.

    Add the sugar, egg, milk & oil to the bowl and mix 10 sec / Counter-clockwise operation"Counter-clockwise operation" sp 4.

    Add SR flour and bicarb soda and stir 10 sec / Counter-clockwise operation"Counter-clockwise operation" / sp4, scrape down the sides of the bowl and repeat if needed.

    Pour into a greased and lined loaf tin, sprinkle some raw sugar on top of the mixture (optional).

    Bake for approx 45 mins or until a skewer comes out clean.

    Serve plain or with butter. 

     

Tip

The sugar can be reduced to 100g if desired.

Is also yummy served warm with honey & cream!

    I was surprised how delicious this is for such a simple recipe with very little fat compared to other banana bread recipes. I added some chia seeds, grated carrots and the second time I made it I left our the bicarb because I found it too salty and the SR flour rises it enough. Definitely a keeper!

    Thanks for this easy quick and delicious recipe. Great to take for school lunches and anytime. I also used 100g coconut sugar and coconut oil, I did add cinnemon. Smile

    Great healthy loaf!

    Didnt have enough bananas so used grated carrot (50g) to top up, coconut oil and less sugar 100g...delicious and easy.

    This was yummy! Definitely one I will make again. I sprinkled chia seeds on top.
