Ingredients

Banana Coconut Cake/Bread

  • 3 bananas, 230 - 280 grams
  • 1 egg
  • 140 grams brown sugar
  • 40 grams Butter
  • 250 grams Self Raising Flour
  • 1 teaspoon baking powder
  • 30 grams desicated coconut
  • 20 grams Milk

Cinnamon sugar sprinkle topping

  • 20 grams caster sugar
  • 5 grams cinnamon

Recipe's preparation

    To make cake / bread
  1. Preheat oven to 180 degrees celcius, grease TM silicone lined bread baking tin.


     

  2. Place banana, egg, sugar & butter in TM bowl and mix 10 sec / speed 5

  3.  Scrape down TM bowl

  4. Add SR flour, baking powder, desicated coconut and milk. Mix 5 sec / speed 6

  5. Place into prepared baking tin and set aside

  6. To make topping
  7. Combine sugar and cinnamon and sprinkle on top 

  8. Bake for 40 minutes until golden
