Ingredients

Mixture

  • 350 g Bananas ripe, approx. 3 Bananas
  • 2 eggs
  • 1 tsp Vanilla Bean Paste
  • 260 g plain flour
  • 70 g cocoa powder, unsweetened or cacao powder
  • 200 g caster sugar, or milled raw sugar
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp bicarbonate soda
  • 120 g Milk, or coconut milk for dairy free
  • 250 g water
  • 120 g coconut oil, can use Vegetable oil if you prefer

Recipe's preparation

  1. Pre-heat the oven to 180 degrees and prepare silicone moulds or cup cake trays with coconut oil (dairy free) or butter.

     

  2. Add bananas, eggs, vanilla bean paste to TM bowl and mix

     10 sec / sp 3

     

  3. Add flour, cocoa, sugar, salt, baking powder, bicarb soda to TM bowl amd mix 

    10 sec / sp 4 

    Scrape down sides

     

  4. Add milk, water, coconut oil (or vegetable oil) Mix 

    20 sec / sp 4

    Pour into prepared mould / cases and bake

    17 to 20 mintes

     

  5. Ready to bake

  6. Fresh out of the oven

  7. Yum!

  8. Super moist!

Tip

These freeze really well, they stay super moist from the banana.

Place them in the luchbox straight from the freezer.

Optional substitutions-

Cacao powder in place of the cocoa powder

Vegetable, canola or macadamia oil in place of coconut oil

Coconut milk in place of full cream milk

    Think these might make it for morning tea tomorrow at the surgery.
    now Tuesday morning and these little beauties smell divine. I know 1 Dr at work will be very happy. Just had taste test. Not bad, I like a little bit of texture in my muffins so next time I would add some nuts or fruit. Always try recipe straight up at first.

    I omitted the cacao, did 250mls of the milk and 120g of yoghurt, swapped out the sugar for 1 Tbspn rice malt syrup, 80g of coconut sugar and 1 tsp of cinnamon. Just a couple of tweaks 😉

    I followed the recipe but found that i needed to cook much longer and that the flavour was quite bland

    :/ perhaps it was my bananas ir something?  Not sure. Ill try them again another day and see how i go

    So delicious and moist! I used 200g rolled oats milled with 60g tapioca instead of a wheat free version and they turned our perfect.

    These are the best muffins. My kids loved them, I am now making them again for the second day in a row so I can freeze some.
