Ingredients

Banana Date and Oat Bars

  • 180 g rolled oats
  • 160 g pitted dates
  • 500-550 g ripe bananas, (4-6 bananas)
  • 50 g rice bubbles, or other crispy cereal
  • 60 g sultanas, or other dried fruit/choc chips
  • 80 g oil, of choice

Recipe's preparation

    Method
  1. Heat oven to 180 degrees Celsius, paper line two small, or one large slice tin
  2. Add half the oats to bowl, mill for 10 seconds, speed 10, empty into medium size bowl
  3. Add dates, chop 10 seconds, speed 10, empty onto milled oats
  4. Break bananas into bowl, mash 5 seconds, speed 5. Add two seconds for less ripe bananas
  5. Add the milled oats and chopped dates and all other ingredients. Mix on reverse for 10 seconds, speed 3.5
  6. Bake for 15 minutes if using smaller tins or 20-25 minutes for larger tin
  7. Remove from oven and let cool for around 5 minutes before taking out of tin and placing it onto cake cooling tray. Cut into desired shape when no longer warm

Tip

This recipe is so incredibly versatile and virtually fail safe. I’ve made it with half the amount of bananas, half the dates, subbed the milled oats for regular flour, used different dried fruits, seeds and nuts and it’s worked every single time! Top with rolled oats, seeds, choc-chips, drizzle with chocolate or yoghurt. It will keep up to a week in the fridge and freezes really well for lunch boxes

    Delicious, nice and moist, will be made regularly. Love how it doesn't need eggs, milk, butter.

    Made this today - was very moist. I added walnuts instead of fruit because that is all I had. I think I crushed up the walnuts too much, so it was missing that crunch I was hoping for. I also found that there was a lot of mixutre and ended up having to mix in two batches - but that meant I was able to make extra slices. A good base line recipe I will use again. Thanks!
