Banana and White Chocolate Muffins
- 250 gram SR flour
- 150 gram plain flour
- 1 teaspoon bicarb soda
- 150 gram brown sugar
- 2 eggs
- 100 gram Grapeseed Oil
- 2 bananas, Overripe (approx 180 g)
- 90 gram white chocolate
Topping
- 100 gram brown sugar
- 90 gram plain flour
- 40 gram Butter, Chopped
- 50 gram walnuts

Preheat oven to 180 degrees and grease 12 hole large muffin tin.
First make topping: Place brown sugar, flour, butter and walnuts into TM bowl. Set lid to closed lid position and turbo 3-5 seconds or until ingredients combine and resemble coarse breadcrumbs. Set aside.
Chop white chocolate in TM bowl on closed lid position, turbo 3-5 seconds. Place remaining ingredients into TM Bowl. Combine ingredients on Reverse/Speed 6/10-20 seconds until combined but still lumpy. Pour mixture into greased muffin tins. Top with combined topping ingredients. Bake 20 minutesor until muffins are brown and firm. Allow to stand in tins for 2 minutes, then turn out onto a wire rack and leave to cool.

Delicious muffins. These are my new favourite mufins, nice and light.
These were nice, however mine also turned out a bit dry even though I put in around 210g bananas. The topping though was devine, although as per a previous comment I will probably halve the recipe in that respect next time round.
Beautiful crunchy on the outside and yummy and soft on the inside had lots of spare topping so next time I'll half that recipe
Absolutely Devine... The best muffins I have ever made, thank you Anita. I did however substitute the walnuts for white choc bits though
Pretty good but bit dry for some reason. I put in 200g bananas but they weren't very sweet ones.
Will try again when bananas are better.

I found I needed a lot longer cooking time. I prefer pecans so used them instead of the walnuts, but still had some crumble left, so have refridgerated it for something else.
Kids loved it, but I hated the mess from the crumble! Next time I might gently push down the crumble on the batter rather than sprinkling on top.
Hi Rhinda, I too am a newbie to the thermie world, and have yet to try these muffins, but i do know that muffins like scones are best when you mix them the least. The more time you mix the tougher the end result. Perhaps if you put some of the banana in first and blend for a few seconds or mash lightly prior to administration. I would also be inclined to add some in first, then after other ingredients. Hope this is helpful. Happy baking.
Yummo. Just made these and have only had my TM for one week! They are delicious!
I do have a question though as a total newbie ~ I found that I had to mix for a lot longer to get my banana combined into the mixture. Am I doing something wrong? I am so new to this, why would you leave the mixture lumpy?
