Ingredients

Please enter ingredients in the following order;

Dough

  • 300 g Self Raising Flour
  • 90 g Butter, cut into chunks
  • 150 g Milk

Filling

  • 60 g Butter
  • 40 g Soft brown sugar
  • 1 tsp cinnamon

Icing

  • 150 g white sugar
  • 1 tbsp Boiling water
  • cinnamon sugar, to sprinkle over icing

Banana mix

  • 1.5 bananas, Roughly chopped

Chocolate Chips

  • 60 grams Mini or regular Chocolate Chips, Blitz to chop well. Keep some for sprinkling over the icing mix also.

Recipe's preparation

    Dough
  1. Pre-heat oven to 210C (190C gas)

    Prepare a baking tray with a sheet of baking paper.

  2. Place flour and butter into mixing bowl and mix 5 sec/speed 5 until mixture resembles breadcrumbs.

  3. With lid set to Closed lid"Closed lid" locked position, knead 40 - 60 sec/Dough mode"Dough mode" Interval Setting adding milk gradually through the MC hole until a soft dough is formed.

  4. Turn out dough onto ThermoMat or baking paper and roll out dough into a rectangle approx. 25 x 40cm and 5mm thick.

  5. Filling
  6. Place all ingredients for filling into mixing bowl and mix 10 sec/speed 4 or until creamy mixture has formed. No Need to clean out bowl. 

    Bananas- Closed lid"Closed lid" Turbo about 4 times, leave some texture to the bananas.. 

    Spread brown sugar mixture evenly over dough rectangle.

    Then evenly spread the banana mix over top followed by the chopped chocolate chips. (keep some for onto of the icing)

  7. Roll up dough from the long side and using a sharp knife (use plastic if using a ThermoMat), cut rolled up dough into 3cm pieces.

  8. Place dough pieces, cut side up, on prepared baking tray and cook in the oven for 25-30 min or until golden brown. Turning tray 1/2 way through cook, for even browning. 

    OR Use a 25cm lined springform pan, evenly place cut scrolls inside pan.

  9. Remove from oven and allow to cool while you prepare icing.

    If you used a springform pan, remove the RING so as the scrolls dont "sweat".

  10. Icing
  11. "No need to rinse bowl after mixing banana - IF you have already made the icing mix." This adds a little more banana flavour to the icing.

    Weigh sugar in mixing bowl and mill 20 sec/speed 9 into icing sugar.

    Add boiling water and mix 5 sec/speed 3 or until all sugar is incorpated and a smooth texture is achieved.

    Drizzle icing mix over scrolls and sprinkle with chocolate chips then cinnamon sugar.

Tip

If you don't care about the colour of the icing you can use raw sugar, the icing will just  be brown instead of white.

    We didnt use the choc chips and altered the dough to something we usually make, but otherwise followed your recipe. Turned out great, they have been a hit with the kids!
