Ingredients

Shortcake

  • 130 grams Unsalted Butter - cubed
  • 240 grams self-raising flour
  • 1 tbsp raw sugar
  • 1 egg
  • 30 grams cold water

Cherry Ripe Filling

  • 350 grams Fresh or Frozen Cherries pitted and halved
  • 1/2 tbsp raw sugar
  • 50 grams White or Milk Chocolate bits
  • 1/2 Cup Shredded coconut

Extra for Top

  • 1/2 tbsp raw sugar

  1. 1. PRE-HEAT OVEN 200 deg

     

    2. PLACE BUTTER, FLOUR AND SUGAR IN Closed lid"Closed lid" AND         MIX Counter-clockwise operation"Counter-clockwise operation" 10 SECS SPEED 5,

     

    3. ADD EGG AND WATER - No counter-clockwise operation"No counter-clockwise operation" MIX UNTIL PASTRY IS AT A PLIABLE CONSISTENCY, THAT REPRESENTS A GOOD PASTRY/DOUGH.

     

    4. DIVIDE INTO TWO EVEN PORTIONS - PLACE ONE IN BASE OF A LINED SLICE, SQUARE OR ROUND CAKE TIN - PERSONAL CHOICE. I USED A 22CM SQUARE TIN.

     

    5. PLACE CHERRIES ON TOP, CUT SIDE UP, SPRINKLE RAW SUGAR ALL OVER. PLACE A CHOC BIT INTO THE HOLLOW OF EACH CHERRY HALF AND ANY LEFTOVERS RANDOMLY OVER. COVER WITH COCONUT.

     

    6. PLACE REMAINING PASTRY/DOUGH ON THERMOMAT AND COVER WITH BAKING PAPER TO ROLL OUT TO A SIZE BIG ENOUGH TO COVER THE TOP OF CHERRY RIPE FILLING. CAREFULLY PLACE OVER THE TOP AND SPRINKLE WITH THE "EXTRA RAW SUGAR"

     

    7. BAKE 25-30 MINUTES UNTIL GOLDEN AND FIRM TO TOUCH ON TOP.

ALLOW TO COOL SLIGHTLY IN TIN BEFORE REMOVING - THEN PLACE ON COOLING RACK (ON BAKING PAPER AT FIRST TO KEEP SHAPE) THEN REMOVE BAKING PAPER LINING AND ALLOW TO COOL COMPLETELY FOR A SLICE OR SERVE AS A HOT DESSERT, WITH CREAM OR ICE-CREAM!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

    A nice recipe and even though it sounds fiddly, wasn't too bad. I didn't refrigerate my top price of dough and found it impossible to stretch out to fit the top, so rolled balls of it into sausages and did lines instead. Still looked nice. A little crumbly.
