Ingredients
Banana cake easy mix
- 125 grams Butter, cut into small pieces
- 125 grams raw sugar
- 3 ripe bananas, broken into pieces
- 1 heaped tsp bicarbonate of soda, dissolved in yoghurt
- 80 grams natural yoghurt, dissolve carb soda
- 2 eggs
- 215 grams SR flour
- 1 pinch salt
Topping
- 50 grams raw sugar, reserved
- 1 lemon, Juiced

- Pre-heat oven to 180 degrees. Line 20 cm cake tin with paper.
Add all ingredients to mixing bowl in order. Mix 10 seconds speed 5. Scrape down sides of bowl. Mix further 5 seconds speed 5.
Transfer mixture to cake tin.
Bake for 45 minutes or until skewer comes out clean. - Topping.
Add juice of one lemon to reserved sugar. Do not dissolve, but spoon the lemon juice sugar mixture over the cake. Allow cake to cool in the tin.
