Ingredients

Puddings

  • 75 grams Butter
  • 150 grams Rapadura Sugar
  • 3 bananas
  • Half teaspoon cinnamon
  • Half teaspoon Nutmeg
  • 150 grams Milk
  • 250 grams Self Raising Flour

Caramel sauce

  • 125 grams Butter
  • 125 grams Rapadura suagr

Recipe's preparation

    Banana puddings
  1. Melt butter for  3 mins 100 degrees and speed 2

    Add sugar

    Add 2 bananas, speed 4,  10 secs

    Add rest of ingredients and mix on speed 5, 10 sec

    In silicon cup cake moulds take the other banana and slice 3 pieces on the bottom of each cup.  Place batter in the cup.  Steam in Varoma for 20 mins Varoma temp speed 2 - use 1 litre boiling water in jug.

    Pop out moulds and let cool.

     

  2. Caramel sauce

    1/2 cup butter and 1/2 cup rapadura sugar.  Mill sugar 15 secs speed 9. Add butter and cook for 2 mins Varoma temp on speed 2. Or until achieve nice thickness.

Tip

You can use any sugar you prefer and any milk your prefer

    Very nice. And easy too.

    Kids loved it. I used raw sugar instead of rapadura in the batter and brown sugar in the sauce. Tasted fine, but sauce needed to cook a lot longer (about 10 mins).

    Recipe yield was 25 puddings - I must have smaller silicone molds.
