Recipe's preparation

    Basic Muffin
  1. 1. Pre heat oven to 180 degrees C.

     

    2. Line muffin tray with cases.

     

    3. Crack egg into thermo bowl. beat 10 seconds/speed 5

     

    4. Add 70 grams sugar 40 grams olive oil. 10seconds/speed 4

     

    5. 300 grams S.R flour 240 grams milk. 10 seconds/speed 3

     

    6. Scrape down sides of bowl.

     

    7. Counter-clockwise operation"Counter-clockwise operation" 5seonds/speed 3.

     

    8. Add fillings and Counter-clockwise operation"Counter-clockwise operation" 5 seconds speed 2.5

     

    9. Fill 12 muffin cases.

     

    10. Bake 12-15 minutes.

Tip

White choc chips are wonderful in these as is raspberries, bananas and blueberries. Can also try nuts or almonds.

    Daughter wanted the batter in mini cupcakes so did 10 mini and 10 large cupcakes. Filling the tins nearly all the may so over 3/4 full. The rose amazingly. I didnt have self raising just used plain with baking powder and baking soda.
    Kids ate 3 straight up so soft and yum

    My daughter requested choc chip muffins for her school lunch box this week. This recipe worked perfectly. I used spelt flour, baking powder and rice bran oil. I made 10 really nice big ones. Lovely and light. Will try fruit ones next time. ThanksCooking 7

    These turned out great. Quick and easy with everything already in the pantry. I made chocolate white choc chip ones by adding 20g of cocoa and 100g of white choc chips. Next I will do raspberry and white choc chip. Thanks!
