Recipe's preparation

    Berry Muffins
  1. Preheat oven to 180 degrees celcius. Grease or line muffin tin

  2. Melt butter 2min/80deg/speed 2

  3. Add remaining ingredients to the bowl (except berries). Mix for 15sec/speed3

  4. Scrapre down bowl. Mix for 5 sec/speed 3

  5. Add berries and mix for 5secCounter-clockwise operation"Counter-clockwise operation" /speed 3

  6. Divide mixture into tray approx 1/2 way up

  7. Bake for approx 30mins or until lightly golden an spring back when touched.

  8. Cool slighty then turn out onto wire rack

Tip

Frozen or fresh berries can be used. I added blueberry coulis as well as fresh blueberries.

Best used within 24hours, or can be wrapped in cling wrap and frozen.

    I made these this afternoon for the kids school snacks. Absolutely beautiful. Very moist and a great flavour. I love how easy they were. I used 200g frozen mixed berries that we had leftover in the freezer from Christmas and they turned out perfectly. I even managed to get 16 muffins out of this batch. They were in the oven longer than the recommended 1/2 hour (only because I heard the timer go off and I forgot about them) and they still turned out wonderful.
