Ingredients
Best Ever Chocolate Cake
- 300 g plain flour
- 400 g sugar
- 90 g cocoa powder, 70% cocoa
- 2 teaspoon baking powder
- 1.5 teaspoon bicarbonate of soda
- 1 teaspoon salt
- 1 teaspoon ground coffee
- 250 g Milk
- 110 g vegetable oil
- 2 eggs
- 2 teaspoon Vanilla Paste
- 230 g Boiling water
Icing
- 340 g unsalted butter
- 120 g cocoa powder, 70% cocoa
- 625 g icing sugar
- 2 teaspoon Vanilla Paste
- 1/2 teaspoon ground coffee

- Preheat oven to 175 C.
- Line two 23cm pans
- Add flour, sugar, cocoa, baking powder, salt and coffee powder to the mixing bowl. Mix 10seconds, speed 4
- Scrape down sides.
Add milk, oil, eggs and vanilla to flour mixture and mix 20 sec, speed 5 or until well combined. - 40 seconds, speed 2.5 carefully add boiling water to batter until well combined.
- Distribute cake batter evenly between the two pans. Bake for 30-40 minutes, or until skewer comes out clean
- Take from oven, and allow cakes to cool in pans for 10 minutes. Then remove cakes from pans and allow to cool completely on wire rack.
- Cream together butter and cocoa powder until well combined
20 seconds, speed 6 - READ CAREFULLY-
Add sugar and milk, by adding roughly a cup of sugar and bout a Tbsp of milk at a time. After each addition mix for 30 seconds, speed 6. Repeat until all sugar and milk has been added. - Add vanilla and coffee powder and mix 20 seconds, speed 5
- If frosting appears too dry add more milk a Tbsp at a time. If it appears too wet, add more icing sugar a Tbsp at a time until it reaches your desired consistency.
- With one cake on the bottom, add a layer of frosting. Then layer on the second cake on top and frost the rest of the cake, top and sides.
