Blueberry & Lemon Loaf

  • 125 grams fresh blueberries
  • 125 grams Butter, cubed
  • 100 grams caster sugar
  • 160 grams self-raising flour
  • 50 grams dessicated coconut
  • zest of small lemon
  • 1 tbsp Maple syrup
  • 1/2 tsp vanilla extract
  • 2 eggs
  • 2 tablespoons Milk
  • icing sugar, dust to serve

Recipe's preparation

    Steps
  1. Preheat oven to 180 degrees fan forced.

    Weight butter into bowl and mix, Speed 6 // 4 seconds.

    Add in all remaining ingredients (except blueberries) in order then mix on Speed 6 // 2 minutes. Scrape down sides and mix for futher 30 seconds.

    Pour batter into lined loaf pan. Tip punnet of blueberries on top and gently mix through the batter with a small spoon.

    Bake for 40 minutes, or until a skewer comes out clean.

    Cool for 5 minutes in pan, then transfer to wire rack to cool.

    Dust with icing sugar and then slice to serve. Great served warm but also delicious at room temperature.

    Freezes very well in slices for lunchboxes.

Tip

I've made this recipe many times so it's tried and tested...I purposely made sure that the ingredients can come straight out of the fridge, because the Thermomix should make baking easier and faster, and this recipe does just that!

The loaf has a delicous sweet crust with a soft but dense inside with gooey blueberries. YUM!

Using fresh blueberries keeps the colour of the cake golden with gooey fresh blueberries that blur into the batter. I haven't tried with frozen, but as per other recipes, use straight from the freezer (don't defrost first).

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

    Next time I make this I will cook at a lower temperature for longer. Hopefully this will stop the cake pushing up in the centre. (As per Royal show comments)

    YUM!!!! i used frozen blueberries straight from the freezer and it was super yum, i carefully folded the blueberries through and it didnt stain the mixture very much at all. The load was crusty but soft and dense. Thanks for a great addition to my weekly meal plan.
