- 125 g brown sugar
- 290 g self-raising flour
- 150 g blueberries, fresh or frozen (thaw frozen berries before use)

Preheat oven to 180 degrees celsius and grease a 6-hole texas muffin tin or line with muffin papers.
1. Melt butter 2 min/80 deg/speed 2.
2. Add the remaining ingredients to the bowl (except blueberries) and mix for 15 sec/speed 3. Scrape down bowl and mix for a further 5 sec/speed 3.
3. Add blueberries and mix for 5 sec/"Counter-clockwise operation" /speed 3.
4. Divide mixture evenly among the muffin tin.
5. Bake for 30-35 minutes, until muffins are golden brown and spring back when lightly touched.
6. Cool in tin for 5 minutes before turning out onto a wire rack.
Blueberry Muffins:

Any berries will work well in this recipe, or chopped fruit of your choice.

Oh my goodness, these were delicious. I used frozen blueberries, washed and dried them then sprinkled a little flour over them so that they didn't sink to the bottom. I put the muffin mixture in paper cases and medium muffin tin. Thanks for posting this recipe
My favourite muffin recipe on the community page. Easy and delicious! I make regular size muffins and cook for 20mins at 180 fan.
Great muffins. Followed others advice and reduced sugar, blending mix a few times to get fluffy muffins as the end result. Thank you for sharing x
Very nice!! Reduced sugar to 95gms and added a mall dollop of lemon butter to centre of muffins (topping wit muffin batter) before cooking

These are the best muffins i have come a cross in so long. They don't last very long in our house. I sometimes change up the fruit depending on whati have in the fridge.
Do these muffins defrost well?
