Ingredients

Bodie’s “Big head” choc chip cookies (GF)

  • 250 g Butter, Cubed at room temperature
  • 375 g condensed milk, (Equal to 1 tin)
  • 200 g sugar, (Caster - white cooking sugar)
  • 1 level teaspoon vanilla extract, (Or essence)
  • 2 eggs, Large (chicken)
  • 500 g self-raising flour, Gluten free
  • 150 g chocolate chips, Nestle (GF)
  • chocolate chips or melts, For decoration

Recipe's preparation

    DOUGH PREP AND BAKING
  1. 1) cream butter, sugar and condensed milk together - Speed 5 for 30 seconds. MC on.
    2) add eggs and vanilla - mix speed 4, 1 minute. MC on
    3) add GF SRF - mix speed 4, 30 seconds, scrape down sides, mix further 30 seconds speed 4. MC on
    4) scrap down sides, add chocolate chips, mix until combined, speed 4. May take 30sec-1 minute. Stir with spatula if needed and mix again for 10-30sec.
    5) place in air tight bowl with lid on, chill in fridge for 20 minutes minimum to set a bit. This makes it much easier to spoon out.
  2. BAKING

    6) pre heat fan forced oven 180deg Celsius and line a cookie tray with baking paper, grease well
    7) use 2 spoons to spoon and shape into rough balls and place on tray. These tend to spread out a bit, so space adoringly or be prepared to separate with a knife when cooked.
    8 ) place desired choc chips on top of each ball. You will need to do this in batches and refrigerate the dough with lid on in between batches as it is easier to do not at room temp. Bake for 10-15 minutes until golden in colour. Keep an eye on them as they will burn suddenly.
    9) remove from oven and cool on tray for 5 minutes, then on Wire cooling rack. (They will fall apart if you move them too son!)They will firm up as they cool. The may need dividing with a knife. They may not be pretty but they are yummy!

    🍪please note these are a combination of several recipes, altered to be gluten free. It is important to use Nestle chocolate as it is GF. I also make in a dedicated GF bowl. Bodie is my son's best friend and we like to make these for him whenever he visits; Thus they are named by and after him! (No he doesn't have a big head. They come out quite big and he said they're nearly as big as his head lol).

Tip

The recipe makes 20+ cookies depending on how big you make them.

All mixing is on forward.

Grease the paper well otherwise they stick

I tend to turn the tray half way through cooking to ensure relatively even baking. I cook in a gas, fan forced oven.
