Ingredients

Boston Bun

  • 275 grams Luke Warm Water
  • 5 teaspoons Yeast
  • 550 grams bakers flour
  • 1 teaspoon salt
  • 2 teaspoons milk powder
  • 2 teaspoons bread improver
  • 65 grams sugar
  • 45 grams soft butter
  • 1 teaspoon cinnamon
  • 100 grams sultanas
  • 100 grams currants

Icing

  • 75 grams Copha at room temperature
  • 150 grams icing sugar
  • 2 tablespoons water
  • 1 teaspoon Vanilla extract/essence

Recipe's preparation

    Dough
  1. This recipe makes 2 buns.

    1. Add all ingredients except fruit to bowl.
    2. Mix 40 seconds, speed 3
    3. Knead 7 minutes
    4. Add fruit and knead for 1 minute.
    5.Remove from bowl and Prove for 15 minutes in warm place
    6. Knock down and divide dough in 2. Form 2 round balls and place on non stick tray to prove for upto 1 hour or until doubled in size.
    7. Bake for 30 minutes at 180 Deg.
  2. Icing
  3. 1. Place all ingredients in bowl and mix for 5 minutes on speed 3. Ice Boston Bun.

    I followed the recipie and got great results.I have a fan forced and put middle rack. Definitely will be doing this again and the extra bun is a good surprise gift.

    Loafmilk: Sorry, it was possibly my note. And it should read as using 50g of the recipe allocation! Not an additional 50g...do try again as they are scrummy!🤓

    I added some water to my fruit as I read on the comments on here and it totally ruined my dough, so wet and sticky I added more flour trying to fix it but it was just a wet mess. Devastated!

    Very yummy recipe however I didn't know it was going to make 2 big buns! Might be good to add that in the ingredients section or in the recipe preparation section. For the icing I used raw sugar, coconut oil instead of copha and milk instead of water which made the icing a brown colour which I didn't mind. Also the icing didn't thicken up like the bakery icing however it was still yum and enjoyed it tmrc_emoticons.) thank you.

    Taste fantastic, maybe cut the fruit down to 75g of each.The icing was as good if not better than the bakery. Will make again
