  • 370 gram buttermilk, or soured milk at room temp
  • 405 g Self Raising Flour, sifted
  • 225 g sugar, very fine
  • 190 g Butter
  • 3 eggs, separated and at room temp
  • 1 pinch salt

Recipe's preparation

    Buttermilk Vanilla Cupcakes
  1. Pre-heat oven at 200 degrees or 190 degrees fan forced. If using normal sugar you can add vanilla essence with the egg yolks later. Weigh 225g of sugar, grind on 9 for 6 secs for raw sugar, 3 secs for white sugar. Set Aside.

  2. If you don't have buttermilk, you can mix the whey from firm yoghurt with skim milk, or add a tsp of lemon juice to light milk

  3. Presift your flour by placing in the Thermomix and mixing on speed 5-6 for 8 seconds.

  4. Place chopped butter into bowl and soften 20-30secs sp 4. In warmer weather use smaller time.

  5. insert Butterfly. Return sugar to TM bowl and cream butter and sugar for 1 minute sp 4. Scrape sides of bowl and then beat a further 30 secs on speed 4. You can do a further 30 seconds, the mix should be pale and creamy.

    Add the egg whites and whip for 1 minute sp 4, again scraping sides and whipping for a further minute.

    Add the egg yolks (and the vanilla extract if using) and whip for 20 seconds on speed 4.

  6. Counter-clockwise operation"Counter-clockwise operation" Add 1/2 each of the buttermilk and flour with pinch of salt and fold for 5 seconds on reverse, speed 2. Scrape the sides of the bowl. Add the remaining half and fold ingredients for 10-15 seconds, reverse, gradually turning speed up to 3..

  7. Pour into prepared muffin tray, 3/4 filling each patty paper. 

    Turn down the heat by 20 degrees, bake 170-180 degrees for approximately 20 minutes or until an inserted skewer comes out clean.

  8. Allow to cool for 5 minutes before removing onto cooling racks. Easiest to decorate if frozen first. Some icing suggestions are: thermogirl's chocolate fudge frosting, or the wilton's buttercream modified for thermomix using copha.

    Yum! So light and fluffy, absolutely delicious! I iced with chocolate icing and topped with 100s & 1000s for the kids lunchboxes.....if they last that long 😝

    Yum! I made butter this morning so wanted a treat to use up the buttermilk. These fit the bill; 24 delicious fluffy cakes. We had to eat some straight from the oven, they were so good.
