Ingredients
Caramel Slice
- 150 g plain flour
- 100 g unsalted butter, chilled and roughly chopped
- 50 g caster sugar
- 150 g unsalted butter, chopped
- 375 g can of sweetened condensed milk
- 250 g dark chocolate, broken into pieces or little melts/chips
- 1 tbsp vegetable oil

- 1. preheat oven to 140 degrees celcius fan forced . line a 20cm square baking tin and set aside.
2. place the 150g Plain Flour, 100g Unsalted butter chilled and 50g caster sugar into the thermomix bowl and mix for 10 sec speed 6 then use the dough setting to kneed for 30 seconds. The mix will be crumbly and resemble bread crumbs
3. tip the mix into the prepared tin and press down until it is smooth and even. bake for 20-25 mins until edges start to go brown.
Let it cool completley before you add the caramel. - CARAMEL FILLING
Add the condensed mik, golden syruo and butter to the thermy and heat for 5 mins/ 100 degress/ speed 3 with the measuring cap OFF.
Heat for 20 mins/ varoma/ speed 3 with measuring cap off. if it spits put the simmering basket on.
Pour the caramel over the cooked shortbread base and spread evenly with a palette knife. Leave on bench to cool for 20 minutes then transfer to the fridge and set for one hour. - CHOCOLATE TOPPING
melt the chocolate in the microwave on 30 second intervals, once melty add the vegetable oil and mix so it is nice and liquidy. pour the choc over the cool caramel then place in fridge to set for 2 hours.
