Ingredients
Icing
- 80 grams icing sugar
- 1/2 tsp vanilla extract
- 250 grams Spreadable cream cheese
- walnuts to decorate, Optional
Cupcakes
- 2 --- carrots, Roughly chopped
- 100 grams brown sugar
- 1 tsp vanilla extract
- 160 grams golden syrup
- 130 grams oil, (I used rice bran oil)
- 3 --- eggs
- 150 grams Self Raising Flour
- 70 grams plain flour
- 1 tsp bicarb soda
- 1/2 tsp cinnamon

Cupcakes
1. Preheat oven to 170 (fan forced)
2. Add carrots to TM bowl & chop 10 sec, sp 5. Scrape down sides & then a further 5 sec, sp 5.
3. Add sugar, vanilla extract, eggs, golden syrup & oil to TM bowl & whisk 10 sec "Counter-clockwise operation" , sp 4. Scrape down bowl.
4. Add the rest of the ingredients & combine 10 sec, sp 3. Check that all ingredients are combined.
5. Distribute mixture between patty pans. Bake for 15 to 20 minutes or until skewer comes out clean.
Allow to cool on a wire rack before icing.
Icing
1. Wash and dry TM bowl.
2. Combine cream cheese, icing sugar & vanilla extract in TM bowl 10 sec, sp 3. Scrape down bowl and mix for a further 5 sec, sp 3.
3. Spread icing on cool cupcakes and add walnut on top (optional).
Tip
Watch oven after about 10minutes as I found mine cooked quickly.
I adapted this recipe from another I found and have been using for quite some time.

Yep I agree not so much syrup or oil is needed, these have been a hit with family and friends
These Were easy ad very tasty!
I did however make a few small changes. I reduced the oil to 100ml and also reduced the golden syrup to 80ml. They still turned out very moist and tasty.
With the frosting I found it was a tas thick to spread so I added just a very small amount of milk.
This is easy and delicious although I don't think you need 160g syrup, I used 60g
