Ingredients

Cupcakes

  • 250 g Milk of choice
  • 4 teabags or 10g loose leaf tea
  • 50 g oil
  • 130 g plain yoghurt
  • 150 g raw sugar
  • 1 tsp vanilla essence
  • 190 g plain flour
  • 1/4 tsp bicarbonate of soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1 tsp ground cardamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • pinch fresh ground pepper

Icing

  • 60 g raw sugar
  • 2 tablespoons cocoa
  • 1 tsp ground cinnamon
  • 1/4 tsp Freshly ground nutmeg

Recipe's preparation

    cupcakes
  1. Pre-heat oven to 180 C and line a tin with cupcake liners.

    Put milk and tea into bowl and brew for 3 mins, 90 C,Counter-clockwise operation"Counter-clockwise operation" speed 1. Set aside to cool approx 10mins. Strain before using. No counter-clockwise operation"No counter-clockwise operation"

  2. Into bowl add oil, yoghurt, sugar, vanilla and cooled tea. (if using loose leaf tea rinse bowl first)

    mix for 20-30 seconds, speed 4.

  3. Add all dry ingredients and mix 5 seconds, speed 4.

    Fill cupcakes holders full with batter and bake about 20-24mins until slightly springy to touch. (These cupcakes are quite moist so expect it to be a little soft to touch)

  4. Icing
  5. Place all ingredients into clean and dry bowl and pulverise for 15 seconds on speed 9. Dust over completely cooled cupcakes and enjoy with a splendid cup of tea.

Tip

These cupcakes can be made vegan by using soy or other types of milk and yoghurt.

For the icing you can use whole cacao beans, cinnamon stick pieces, small whole nutmeg and mill for 1 min, speed 9. Then add the sugar and mill for another 10 secs. set aside. This can be done before making the cupcake batter and the remnants from the icing can be left for added flavour.

    Delicious thank you, I cooked them a little longer but they still didn't rise as well as they might do will add extra baking powder and perhaps flour  next time

    These are very tasty, though my second batch didn't rise as well, and I think I used above the suggested amount of bicarb and baking powder in my first batch, but as for the recipe in the second.

    We haven't iced them as yet, since they disappear too quickly! Great for lunchbox snacks.

    Thank you for this lovely recipe. Very easy, nice texture and super tasty!

    These little cupcakes do not like to leave the safety of their cups but, nothing that can't be tackled with a teaspoon  tmrc_emoticons.)

    I think these will become a firm favourite. 

    I ground the spices as suggested in the tip and, used cacao powder - makes heaps, so I'll have some for my next batch or might even add to some hot milk for a choc-chai latte.

    tmrc_emoticons.)really yummy! Cooked for 20 mins on 180! But I used a chai powder from a friend who has a coffee bean shop. I used this instead of tea leaves and the additional spices!
