Ingredients
Nut Base
- 1 clove garlic
- 100g cheese
- 160g breadcumbs, + extra for the top
- 120g raw mixed nuts
- 10g linseeds (optional)
- 10g sunflower seeds (optional)
- 10g chia seeds (optional)
- sml bunch parsley
- 65g Butter
Leek Topping
- 5-6 tomatoes, ripe, chopped
- 4 medium leeks, roughly chopped
- 60g Butter
- 45g plain flour
- 220g Milk
- salt and pepper to taste

Pre-heat oven to 220 C, grease a deep pie dish (roughly 25cm Diameter)
Place garlic clove into TM bowl and chop for 3 seconds, speed 7.
Add cheese and grate for 6 seconds, speed 8.
Add the rest of the ingredients except the butter and mix for 4-5 seconds on speed 5. (Do not over-mix as the crunchiness of the nuts gives this dish it's appeal), set aside
Place butter into unwashed TM bowl, melt for 1 min, 100 C, speed 3.
Add the nut base ingredients and mix for 20 seconds,"Counter-clockwise operation" , speed 4.
Transfer the base mix to pie dish and press down. Bake in a hot (220 C) oven for
15-20mins. (No need to clean TM bowl)
Place leeks into TM bowl and chop for 6 seconds, speed 5.
Add butter and saute for 4mins, 100 C, Speed 1.
Add flour and milk, mix for 10 seconds, speed 3. cook to thicken for 3 mins, 100 C, speed 1.
Add tomatoes, Salt and Pepper and cook for 15mins, 100 C, "Counter-clockwise operation" Speed 2.
Pour over Nut base and sprinkle with extra breadcrumbs.
Bake at 180 C for 20 minutes.

I got some really cheap leeks so msde this yesterday. We loved the crust (agree about not chopping too long for better consistency). I used thyme instead of parsley which worked fine.
The topping was creamy and tasted good too. I thought it would set but was kind of like porridge consistency.
