Cherry Clafoutis (Cherry Batter Pudding)
- 25 grams Butter, For greasing dish
- 2 eggs
- 200 grams Milk
- 30 grams plain flour
- 30 grams castor sugar
- 0.5 teaspoon vanilla essence or dark rum
- 350 grams fresh black cherries, washed, stalked but not stoned
- icing sugar, for dusting

Preheat oven to 200 degrees Celcius. Grease round ceramic oven dish (approximately 20cm) and set aside.
- Place eggs, milk, plain flour, castor sugar, and vanilla essence or dark rum into mixing bowl and mix 20 sec/speed 6.
- Wash and pat the cherries dry. Spread them evenly in the baking dish. Pour in the batter.
- Bake in the centre of the oven for 20-30 minutes or until the top is golden brown or until a wooden skewer inserted into the centre comes out clean.
- Dust lightly with icing sugar, and serve the clafoutis while it is still warm.

Tip
Can be served cold.
Could be served with a dallop of cream.
I have found it's best to use whole fresh cherries as they maintain a whole and full shape which is very pretty when cooked and served compared with jar or frozen cherries that tend weep into the mixture and result in a sadder and soggy looking pudding.
