  • 280 grams lemon juice

Recipe's preparation

  1. Add castor and butter into tmx. Beat 20 seconds Speed 4.



    Add egg yolks, lemon juice, flour and milk into tmx. Mix 20 seconds Speed 6.



    Pour this mixture into large deep baking dish.



    Stiffly beat/ aerate egg whites (best at room temperature) in a separate dry container using a whisk for approx 2 minutes or until stiff.



    Fold egg whites gently into the mixture. Cover the pudding with alfoil.



    Stand the pudding baking dish in another dish 1/4 to 1/2 filled with water and bake for 1 hour in fan forced oven at 160 degrees celcius. After 40 minutes carefully (as the oven can be steamy hot) take the alfoil off and place back into the oven for a further 20 minutes to finish cooking and brown the top.



    Et Voila! When ready, the pudding appears golden brown on top, with a cake type centre and thick lemon sauce on the bottom.



    Optional add finely grated lemon rinds into the mixture



    Optional servce with a dallop of cream.

    Amazing Winter Dessert!

    I was looking to use up a lot of lemons and came across this recipe. Not only did it use a bucketload of lemons, it was a sensational dessert.
    Don't forget to use a large casserole dish!

    A beautiful lemon pudding with a thick sauce! Yum tmrc_emoticons.) I did put 50g less sugar and was still sweet enough.
