Ingredients
- 4 x 52 grams Cherry Ripes
- 110 grams glace cherries
- 240 grams plain flour
- 60 grams Shredded coconut
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 250 grams Cubed Butter (room temperature)
- 40 grams brown sugar
- 10 grams Coconut sugar
- 70 grams raw sugar
- 2 eggs

Preheat oven to 180 degrees.Break into Thermomix mixing bowl cherry ripes and glace cherries. Mix speed 7/4 secs. Place mixture in separate bowl and put aside
In clean mixing bowl, add plain flour, coconut, baking powder and salt. Mix 3 sec/speed 4. Place in separate bowl and put aside with the cherry mixture.
Give mixing bowl a quick rinse and dry. Add raw sugar and mix speed9/10 secs until sugar becomes white and fine in texture. Add butter, coconut sugar and brown sugar and mix speed 6/20secs. Scrape down sides
Mix butter and sugar again speed 2/30secs but whilst its mixing add two eggs (one at a time) and flour mixture ( a tablespoon at a time) through the mixing bowl lid hole. Once flour is completely added mix 10 secs/speed 8 with MC on
Add cherry mix to cookie batter, and mix "Counter-clockwise operation" /speed 8/7 secs or until cherry mixture is incoporated.
I find this part easier, if you wet your hands. Get a teaspoon of cookie mixture and roll into a ball. Place on a lined baking tray. Only do six at a time as the cookies will spread and expand. Place into oven for ten minutes until slightly golden brown
