Ingredients
Chia, banana and chocolate muffins (egg free)
- 120 g sugar
- 100 g Butter, cubed
- 130 g Milk, whole
- 250 g banana, ripe, ripe, peeled
- 300 g Self Raising Flour, purchased or EDCBK recipe
- 60 g dried coconut, desiccated or flaked
- 2 tbsp chia seeds
- 100 g chocolate bits, Milk, white or dark

- Pre-heat oven to 180°C FF
Add sugar to Bowl and mill 10 seconds Speed 8. - Add butter and cook 1 minute 50 degrees Speed 2 or until melted.
- Add milk and banana to sugar/butter mixture and mix 10 seconds Speed 5.
- Add remaining ingredients and mix 10 to 15 seconds Reverse Speed 5. Use spatula if required to ensure well mixed. Do not mix at high speed or more than 15 seconds.
- In a 1/2 cup muffin tray (no butter if silicone or paper cases) with mix and bake 20 mins or until a skewer inserted comes out clean. NB: They will not rise much as there is no egg.
Cool on wire rack and enjoy! - Stay moist a few days and freezable.

Tip
Great for lunch boxes as they are both egg free and nut free.
Using really ripe banana gives best results and sugar can be dropped to 100g if desired.
Can be made with SR GF Flour and DF "milk" with baking Nutalex if needed.
Substitute coconut with an alternative if desired.
Can be made into smaller bite sizes or as a slab cake.
If wanting to make a double batch - do initial mix in TM Bowl and then tip into a mixing bowl and mix weighed dried ingredients in by hand with a spoon - it's still easy and quick.

We added choc chips and blueberries and made epic looking, moist muffins that were devoured.
I hadn't thought of adding fruit! Great idea and might be good with blueberries? 👍

These are soooooo good. They rose quite high even without the eggs! Delicious. Definitely a winner. 😊👍🏻
Yum and moist!
I used less sugar, about 2 thirds, and added 1T of yoghurt as only had about 1T of chia seeds and they were delicious!
OMG These are Awesome............ Thank you so much for a very easy versatile recipe. I have made these gluten and dairy free as well as egg free. I used less sugar as I use rapadurra. Family love them, but best part is they dont realize that they are healthy.

Delicious, easy and quick.
These are great, nice and fluffy and soft. I leave out the choc chips and halved the sugar and was still amazing.
My kids are demolishing these! Yum
