Ingredients

  • 60 g Butter, cubed
  • 100 g sugar
  • 80 g brown sugar
  • 1 egg
  • 1/4 tsp vanilla extract
  • 110 g plain flour
  • 35 g self-raising flour
  • 1/4 tsp salt
  • 1/2 tsp bicarb soda
  • 110 g rolled oats
  • 90 g dark choc chips

Recipe's preparation

  1. Preheat oven to 190.

    Add butter and sugars to TM bowl and cream together 30 sec / Speed 4 until well combined.

    Add egg and vanilla through hole in lid and continue to blend on Speed 4 for a further 30 sec.

    Add flours, salt, bicarb, rolled oats and choc chips and set TM to closed lid Closed lid"Closed lid" . Mix 1 minute on interval speed Dough mode"Dough mode" .

    Place teaspoonfuls of mixture on oven trays lined with baking paper and place in oven for 10-12 minutes. (watch closely)

    Trasfer biscuits to wire rack and allow to cool.

     

Tip

Delicious for kids lunch boxes as a healthier snack.

    Made these this afternoon and they are delicious. Hubby liked that were crunchy on the outside and soft on the inside. Easy to make. Will definitely make these again

    Love these. I make them as my quick afternoon snack for the kids. I dropped the sugar to half and still find them sweet enough for us. Also added almonds with the choc chips. Have previously used apricots and dates. All work well.

    I agree with the comments it is a great recipe to play with. Use what you have available. I have seen some remarks about the amount of sugar, but if you do the math there is far less sugar in each cookie compared to any off the shelf snack.  tmrc_emoticons.)

    Just made these and myself and 2 year old love them. very versatile recipee i only used 80g rapadura sugar. used white spelt flour instead of plain and used a mixture of carob chunks and macadamias instead of choc chips.

    I've made these twice and have to admit, the first time I was busy chatting & not paying attention and just put all the ingredients in at once before mixing. :O  They worked out fine & were still yummy & very popular with the whole family.
