- 350 grams plain flour, I use special white 00 flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 50 grams castor sugar
- 150 grams brown sugar
- 1/2 tablespoon vanilla extract
- 180 grams Butter, softened, unsalted
- 3 eggs

I'm cooking this todayRecipe's preparation
1. Preheat oven to 180°C
2. Add butter, vanila and sugars to mixing bowl. Mix on speed 4 for 30 seconds.
3. Add salt, baking powder and baking soda (can use all of one or the other or cream of tartare).
4. Add the eggs and mix on speed 4 for another 15 seconds
5. Add the flour to mixing bowl and mix on speed 4 for 1 minute
6. Add 200gm choc chunks (milk or dark, chips or chunks) and stir on speed 2 for 1 minute
7. Empty bowl on to ThermoMat and make sure its mixed through with spatula.
8. Line a baing try with baking paper and lightly grease
9. Using a desert spoon, make a spoonful of mixture and place on to baking tray.
10. Bake at 180°C for 12 minutes.
11. Immediately take out of oven and place on cooling rack.
Method
Tip
I bake in batches as I don't have enough oven trays. Always best to bake on low shelf in the oven. Makes about 30 cookies depending on the size.
