Ingredients

Choc Chip Muesli Bars

  • 100 g coconut oil, butter can also be used in place of the coconut oil
  • 100 g rice malt syrup or honey
  • 125 g rolled oats
  • 200 g seeds, sunflower/pepita/flax
  • 50 g Coconut, dessicated or shredded
  • 50 g choc chips

Recipe's preparation

    Choc Chip Muesli Bars
  1. Preheat oven to 170degrees 

     

  2. Line a 20 x 20cm baking pan with baking paper

     

  3. Add the coconut oil (or butter if using), honey and salt to the thermomix bowel, cover with lid and measuring cup.

  4. Cook for 5mins/120C/speed 1.5

     

  5. Add remaining ingredients EXCEPT the choc chips and combine for 30 seconds/Counter-clockwise operation"Counter-clockwise operation" /speed 2

     

  6. Press the mixture firmly into the lined 20cm x 20cm baking pan and sprinkle with the choc chips.

     

     

  7. Bake for approx 30mins until lightly browned

     

  8. Take the pan out of the oven and allow it to cool for 10 minutes before placing the baking pan in the fridge to cool and firm up (this helps with cutting).

     

  9. Remove the pan from the fridge and cut to your preferred sized bars

    Whole family love these! Going to try mixing some choc chips through before placing in tin and cooking, as so many seem to fall off. Great recipe though!

    Mine just fell apart. Maybe needs an egg to hold it together. The crumbs tasted nice so will try again with an egg.

    Fussy eater gave these thumbs up.
    I reduced coconut and added sesame snd chia seeds. Next time will reduce cook time so it's less crunchy.

    Was surprised how easy and tasty these are considering no sugar is used! I didn’t have seeds so used 100g crushed walnuts and 100g extra coconut.
    Definately on my favourites list. 😀

    I love these as they are so adaptable. You can sub lots of different seed combos. I particularly like hemp for a chewy consistency.

    Wow!
    Made these exact to recipie as a trial run for school lunches and were devoured by the whole family & childrens friends in minutes! I found there was probably a bit much oil/liquid which left a little bit of pooling on the bottom of the slice- didn't take away from the flavour.
    The second time I had to change things up as i my pantry was running low (1/2 butter/coconut oil; 1/2 honey/rice malt syrup; fruit & seed mix), but added 15g more of oats & some cashew nuts and was again beautiful.
    Will be a regular in out house now. Thanks for sharing.

    I made these for my daughter (15) to take to school. Big hit! I'm making another batch now. I did leave out the coconut as she is not a big fan but otherwise she loves it.

    Yummy, easy! Made these this morning, used 100 grams almonds and 100 grms sunflower seeds, used 40grms coconut oil and 60 grms butter, substituted currents for choc chips. I cooked them in rectangle muffin tins so no need to cut! Will be making these regularly, thanks.

    I gave it 5 stars but for some reason it won't save my stars.

    A hit with the kids.  Squished tablespoons of the mixture into little shallow silicone mould things I have.  Added cranberries into the mix. Then pressed a dark chocolate melt button ontop of each one.  These turned out quite crumbly, so I'm not too sure how you would go cutting a slice without it disintegrating, very happy I did the individual moulds.  Delicious.
