Ingredients
Chocolate Beetroot and blueberry muffins
- 100 g beetroot, peeled and roughly chopped
- 200 g dark chocolate, broken into pieces
- 120 g Butter, roughly chopped
- 200 g self-raising flour
- 100 g Coconut sugar
- 1 teaspoon baking powder
- 4 eggs
- 1 tablespoon Vanilla bean paste or extract
- 20 g cocoa powder
- 100 g blueberries
- 1 pinch salt

Preheat oven to 180c
Place beetroot and blueberries into mixing bowl and chop 10 sec/speed 6-7. Set aside. Clean and dry mixing bowl.
Place chocolate into mixing bowl and grate 10 sec/speed 8. Set aside.
Place butter into mixing bowl and melt 2 min/70˚C/speed 2.
Add reserved beetroot, blueberries and chocolate, flour, sugar, baking powder, eggs, vanilla and cocoa powder and combine 30 sec/speed 5, or until well combined.
Transfer mix to muffin cases and bake for 15- 20 minutes on 180c or until an inserted skewer comes out clean. Allow to cool for 5 minutes and transfer to a wire rack to cool completely.

Tip
You can leave the beetroot out if you prefer, just add another 100g blueberries or raspberries instead. These muffins are great for lunchbox snacks.

Very, very nice. Easy to make but the only thing is I had to cook for 25 mins at 180 C but my oven is a wee bit out. Will definitely make these again.

These were rich and decadent but unfortunately a bit too intense for the kids. Damn, I was hoping I could use this clever recipe in lunch boxes but now hubby and I will have to eat them
Delicious muffins! I used half milk and half dark chocolate just because the kids ins the dark too bitter. Yummo
I have made these twice now and my family loves them! I left out the blueberries and put a tsp of dairy free dulche de leche (Quirky Cooking) on the top of each one before cooking and they were delicious. Great recipe, thanks for sharing
Just made these and loved them. Big hit with the kids... Final test will be my mum wont tell her what is in them though
These are amazing! I make these (and freeze) for lunchbox snacks for the kids and totally omit the sugar. They are delish!!! Great recipe!
These are delicious. I iced them with ganache from the basic cookbook. Also, chop the chocolate first and don't worry about rinsing the TM bowl out. And I used frozen blueberries which i think added moistness. Yum.
I don't use SR flour but Coconut flour. Does anyone know what the equilavent would be?
